Spinach Rice Saute

2 Cups Cooked Rice
3 Cups Spinach
1 medium red onion
2 garlic gloves
 

Sauce:
3 tblsp of Dijon mustard
2 Splashes of white wine
Two turns of cracked pepper
Dash of cayenne pepper
Dash of garlic salt



Sauté garlic and onion until tender, then add spinach and sauté until rendered.  Add rice and combine. 

Sauce:  Combine all ingredients and whisk until combined. 

Combine sauce and pilaf together and combine.  Sauté until combined.  At the end of the cooking process sprinkle feta cheese and cover to soften. 

Remove and serve.
